Team members are trained to take precautions in order to minimize the risk of cross-contact in made to order areas. This includes proper hand washing, changing of gloves and aprons, as well as cleaning and sanitation procedures.
Team members are trained to mitigate cross-contact by frequently changing out serving utensils, as well as cleaning and sanitizing service areas. Serving utensils are not shared between menu items. Guests with food allergies are able to request from separate batches stored in the back of house to mitigate cross-contact risk.
Students with food allergies that cannot be accommodated by allergen-friendly options available and who are approved for a separately prepared meal accommodation via the accommodations office are able to utilize a text system to pre-order meals to be available for pickup one hour later. This menu is planned in collaboration with the campus dietitian and campus chefs.
Our allergen-friendly station, Delicious Without, is located in our residential dining hall, Terrace Dining Room (TDR), and avoids the top 9 allergens (wheat, milk, egg, fish, shellfish, peanuts, tree nuts, soy, and sesame) as well as gluten. We have a separate preparation area, equipment, and service area for these items. This area is served by a team member onto a clean plate. This area offers menu items for all meal periods, as well as select made-to-order items such as sandwiches or bagels.
All hourly dining staff receive a FARECheck Certified Food Allergies & Celiac Disease Training from our campus dietitian at the start of each semester. Areas covered include: Understanding food allergies, the top allergens, allergic reaction signs and symptoms, peanuts and tree nuts, food allergy emergencies, celiac disease & gluten intolerance, and mitigating risk for cross contact. Staff members also receive weekly pre-service allergen trainings (CHATs).

If you wish to request disability-related dining accommodations, you must:
- Submit the disability-related dining accommodation request form
- Submit documentation that specifically addresses the disability-related dining accommodation being requested (please use the form listed above under Documentation Guidelines)
- Meet with a member of the ASAC Disability team. You will be contacted by ASAC when you are ready for this step.
