Like made-to-order menu items, students with food allergies who feel comfortable navigating self-serve menu items are encouraged to self-identify with a person in charge (such as a manager/supervisor/Chef). The person in charge will clarify any ingredient questions the student may have and bring out ingredient & product information upon request. Additionally, if a student has a food allergy, they can always request ingredients from the back stock that have not been in the service line.

We encourage our students with allergies to always ask for a person in charge (manager/supervisor/Chef). While all staff receive food allergy & gluten-free training throughout the year, the person in charge will ensure the highest quality of care. This includes changing of gloves and proper hand hygiene before preparing a meal for a student with an allergy, creating a barrier or preparing the meal in a different location of the open kitchen & utilizing separate color-coded equipment and utensils (purple) to prepare the meal. For a meal ordered through GrubHub on Campus, the person in charge will sign off on the prepared meal before handing it to the student.

Students with food allergies and/or celiac disease are encouraged to reach out to the dietitian on campus as well as the Office of Disabilities. Students with food allergies and/or celiac disease can set up a meeting with the dietitian and campus Chefs to opt-in to pre-ordered meals to fit their dietary needs and pick up at times that meet their schedules.
The True Balance station is a full-service station where each meal for lunch & dinner is prepared using ingredients made without the top 9 allergens plus made without gluten. Any team member who works at this station, from the person who prepares and cooks the meal to the person who serves the meal, must pass and become AllerTrain Certified- an ANSI-accredited allergen and gluten-free training from MenuTrinfo. Monthly audits are conducted to ensure proper compliance. This station offers animal protein, vegetables, and starch to build a complete & balanced meal.
The campus dietitian is a certified AllerTrainer through MenuTrinfo's AllerTrain program. The AllerTrain is an ANSI-accredited organization that provides specialized training related to food allergies, celiac disease, and the importance of creating a safe environment in a university setting. Our dining managers, supervisors, front-line associates, and back-of-house associates undergo AllerTrain courses every academic year, along with additional training throughout the academic year to reinforce AllerTrain learnings. The AllerTrain certification program for our dining teams consists of a half-day training session, an open floor for Q&A, case studies, and the certification exam. Through AllerTrain, our dining team learns to identify the Major 9 food allergens (USA), the "hidden ingredients" of these major allergens, learn about Celiac disease, food sensitivities & intolerances, how to prevent cross-contact and handle special meal requests. Training also goes over how to recognize common symptoms of a food allergy reaction and respond appropriately within University guidelines.
For ResLife programing such as events set up by dorm RA's, students with dietary needs are encouraged to always self-identify their dietary needs so ResLife can provide safe foods.
