Students can communicate their allergens to their server.  Our team should take precautions to follow procedures to minimize cross-contract, i.e. change gloves, wash hands, separate pans, getting foods from back-up supplies.

In resident dining, students can pre-order meals with our culinarians if it is determined that the student requires dining accommodations.

If a student is uncomfortable with the self-serve process, they can request foods from our back-up supplies that have not been in circulation.  This is particularly helpful for salad bar options.  Staff is trained to minimize cross-contact with allergens, i.e. change gloves, wash hands, separate utensils, food from back up supply, etc.

Team members are trained to take precautions in order to minimize the risk of cross contact in self-serve areas.

This includes proper handwashing, changing gloves and aprons, as well as cleaning and sanitation procedures.

Serving utensils are changed out every 30 minutes, and serving lines are sanitized throughout service.

Students are also prompted to take a clean plate each time they visit the serving line. 

Additionally, our chefs batch cook. This means that there are untouched batches of food ready for students that have a concern. And, separate food preparation can be available upon request.

We offer Sodexo's Simple Servings platform in Johnson resident dining hall.  This station is tightly controlled for allergens and the menu items offered are made without egg, milk, soy, wheat, tree nuts, peanuts, shellfish and gluten. Simple servings offers fin-fish for added protein options.  We offer a variety of simply prepared menu items.

Residence Life programming food is ordered through our catering department. When an order is placed, there is a textbox that can be filled out by the person placing the order. This is where special requests can be made, or notes can be written to let Dining Services know about a guest with an allergy. We will handle of each these on a case by case basis.
