1. We provide access to ingredient information for made-to-order* items. *Made-to-order - Meals that are prepared on request and to your specification in the dining hall. Examples include a sandwich station, omelet station, burrito station, etc.
Salad bar, Pizza, Soup, Bakery and Bread stations have signs listing top 8 allergens and additional ingredient information is available upon request.
We do not offer peanuts or tree nuts in our cooking in the dining hall, however we do offer individual cups of peanut butter is available to students near the bread station.
**Self-serve stations are temporarily replaced with a staff member to comply with COVID related restrictions.
2. We provide access to ingredient information for self-serve* items. *Self-serve - Meals that are served buffet-style in a dining hall. These are typically high risk for cross-contact and are best avoided by diners with food allergies.
Simple Servings station, this station does not use 7 of the top 8 allergens and gluten in its cooking. The only top allergen it will on occasion serve is fish. The equipment for this station is designated for this station only so this lowers the risk for cross contact with other stations.
All of the Dining Halls Management, Cooks and Servers are trained in Allertrain food allergy training. They also participate in ongoing training to maintain knowledge. Food service staff are trained to take cross-contact precautions, such as washing hands and putting on clean food-handler gloves. Students with food allergies may request a meal made in advance prepared on separate equipment.
3. We have procedures in place to lower the risk of cross-contact in made-to-order areas.
Our self serve options include: Bakery, breads, cereal, Pizza, Grill, Soup, Salad and U-Cook. Separate utensils are used for each item. We do not offer peanuts or tree nuts in our cooking in the dining hall, individual portion cups of peanut butter is available to students near the bread station. Out of abundance of caution, self serve meals are typically a high risk for cross contact and for this reason best avoided for those with food allergies.
We ask all students with food allergies to meet with our Dining Registered Dietitian so that as a team, they can come up with an action plan for safest foods to eat and which it would be best to avoid. Each consultation is individualized to what works best for each student.

5. We have pre-order meals* available. *Pre-order meals - Custom meals that can be ordered in advance by a diner so they are ready for pick up at a specific time. Typically these can be ordered online or by phone/text.
The Simple Servings station is a hot meal and stir fry station that offers a different entree for lunch and dinner Monday-Friday. This is open to all students with no special card access required.
We also offer My Zone, which is a "pantry" that is free of Peanut, Tree Nut, Wheat and Gluten. This is a locked pantry that requires special accommodations to access. This area has a full size refrigerator, and cooking equipment that is designated for this station only.
These stations are located in the main dining hall on campus.
6. We have an allergy-friendly station*. *Allergy-friendly station - A food station where specific ingredients are banned, typically including many or all items in the Top 8 allergens and gluten.

We expect students with food allergies to inform the cooks or servers prior to placing their meals. Our cooks and servers are trained in food allergies however there is always a manager on duty available to answer any questions!
7. We train dining services staff members.
8. We have a registered dietitian* on staff. *Registered dietitian - Registered dietitians are food and nutrition experts who are often tasked with helping students with food allergies navigate the dining halls.
9. We train our RA's.
10. We have inclusive resident life programs* including food. *Inclusive resident life programs - Programs in the resident halls often include food. Inclusive resident life programs will offer students with food allergies the opportunity to request safe food alternatives for events they attend in the dorms.
11. We offer accommodations for roommate assignments. *Every accommodation request is evaluated on a case-by-case basis. A housing accommodation cannot be guaranteed prior to an individual evaluation.
To submit a request for access to My Zone because of Celiac disease, Gluten Sensitivity, Peanut allergy, and/or Tree nut allergy follow the steps below: • Have your healthcare provider fill out the Medical Documentation Form. And fill out an online Accommodation Request Form •
Once these forms are submitted you will be contacted by Student Disability Services with notice of approval or denial of the request. • Students asking for accommodations are required to meet with the registered dietitian so she can give you an orientation and show you the areas that will fit your dietary needs.
12. Our disability office processes food allergy and celiac disease accommodation requests.
Dining Services does not carry stock undesignated epinephrine, please always carry your Epi Pen on you when dining on or off campus.
13. We have stock, undesignated epinephrine* available for emergency response. *Stock, undesignated epinephrine - Epinephrine that is prescribed to a college or university rather than to a particular student. This epinephrine is kept on hand to use for any student that experiences anaphylaxis.
14. Our campus emergency responders carry epinephrine.
