Students with food allergies or celiac disease are encouraged to speak with the ingredient expert (manager or chef) for verification. We can provide ingredient, recipe and preparation information upon request to help students make informed decisions.
Team members are trained to take precautions in order to minimize the risk of cross-contact in made to order areas. This includes proper hand washing, changing gloves and apron as well as cleaning and sanitation procedures.
Our pizza/pasta station has cross-contact procedures in place as does our Erbert & Gerbert's retail location. We stock many allergen friendly and gluten free products in our convenience store. We also have a separate Allergen Friendly/Avoiding Gluten station where all items are stored, prepared and served apart from all other foods in dedicated freezer, cooler and kitchen spaces. Our ingredient experts are happy to help students with food allergies/intolerances navigate all dining areas on campus.
Our Allergen Friendly/Avoiding Gluten area is used to serve foods that do not contain the top 8 allergens, nor do they contain gluten. We have self-serve items for students avoiding gluten near that area so they are completely separate from all other self serve areas and items. They are also clearly labeled.
We have reduced self-serve areas due to ongoing pandemic restrictions; however, the areas that are self-serve are properly separated between non-allergen friendly and allergen friendly/avoiding gluten. They also include helpful signage and are regularly staffed and/or cleaned and maintained by our personnel.
We have meals available for students regularly at our Allergen Friendly station which is a dedicated, prepared food station with food made from recipes that do not contain the top 8 allergens, 9 in January 2023, nor do they contain gluten.
We have a dedicated, prepared food station which we refer to as Delicious Without, where we provide a variety of hot and cold allergen friendly and avoiding gluten foods for students.
We also have an avoiding gluten pantry near the Delicious Without station with equipment for students to use separate from the appliances that students who are not avoiding gluten use.
All dining team members are trained on food allergies upon hire and at least once per year thereafter. Areas covered include: understanding food allergies, the top allergens, allergic reaction signs and symptoms, peanuts and tree nuts, food allergy emergencies, celiac disease and gluten intolerance, and mitigating risk for cross contact. We also provide some weekly pre-service allergen training.
If food is offered programmatically, it is not always allergy friendly. Most often what is available is candy or small snacks. Food is usually not the main feature of the program but is sometimes used to entice extra participation.
Housing accommodations should be requested through Ability Services.
Dining Services
Ability Services manages both academic and housing accommodations. They work with dining services, which processes meal plan accommodations, and residence life, whom they work with on housing related needs.
